Moisture Determination
At the end of production, to recycle waste and get the most out of your grape marc by-products, you can sell it as livestock feed, to a distillery or to a cosmetic manufacturer. Spoilage Detection
Despite having a Hazard Analysis and Critical Control Point system (HACCP) in place, contamination can still occur at various stages of your wine production. The main contaminants of wine include: Lactobacillus, Oenococcus, Pediococcus, Acetobacter, yeasts and molds. These microbes can affect the flavor and smell of your wine and damage to your reputation and brand.

Membrane filtration is the established method of choice for water testing as you can test a higher volume of the sample by concentration of potential contaminants on the membrane filter. This method provides reliable and reproducible results. The recommended filter type for microbiological testing of liquid samples is cellulose nitrate (mixed cellulose ester) filter with grid lines. To make certain the quality and flavor of your wine meets your customer’s high standards, you need to perform analytical quality control testing. When red wine ages in barrels, your samples are sent to the lab for analytical testing to ensure the aging process is progressing properly. These tests can detect the following:
- Maturity of grapes - from grape to bottle
- Fermentation process control
- Sulphur dioxide
- Confirmation that harvested fruit is fully mature
- How ingredients are changing to make decisions about altering your wine’s chemistry (for example adding acid, sugar, or tannin)

What to test?

Filter papers
Many analytical QC tests in brewery labs require a filtration step prior to the testing procedure to pre-process the sample. Circular, pleated filter papers of different grades are placed into a funnel leading to a receptacle and are used to remove turbidity from wort, to remove yeast cells after fermentation and to reduce CO² or degas the sample prior to tests such as density measurement or specific gravity.

Air Monitoring
When producing wine, knowing which microorganisms are present in your production environment is critical. Wine is most at risk of contamination when it is being decanted from the barrel into bottles, as sugar in the wine acts as a growth medium for many microorganisms present in ambient air. Microbial contamination of your wine can then occur while the bottle is on the shelf, changing its flavor and odor.
What to test?
Test ambient air for airborne microorganisms, for example at your filtration and filling lines, as well as at other critical points in your production areas
